Tasting menus: courses, duration, adaptations and the complete cost

A tasting menu follows a sequence set by the kitchen. Check its duration, complete cost and accepted requirements before committing to it.

The essentials

Ask about courses, estimated duration, drinks and extras, possible adaptations and whether everyone at the table must choose the same menu. Obtain explicit confirmation of essential requirements.

  • Compare the full cost, including drinks.
  • Allow enough time for the sequence.
  • Confirm requirements before booking.
  • Ask separately about wine and non-alcoholic pairings.

Understand the sequence

The course count may include smaller elements as well as main plates. Bread, appetisers, pre-desserts and final sweets may be additional or counted differently. Ask what is included if duration or portion size influences your decision.

Some venues offer different lengths; others serve one menu to the whole table. A surprise menu still requires a clear conversation about foods that cannot be eaten.

Check before confirming
  • Course count
  • Same menu for everyone
  • Lunch or dinner
  • Exclusions and supplements
  • Estimated duration

Confirm adaptations beforehand

A kitchen may adapt a dish without being able to rebuild a whole sequence at short notice. Explain allergies, dietary requirements or other essential exclusions when enquiring and ask for a direct answer.

Distinguish an allergy from a preference. If staff cannot confirm that an essential requirement can be handled, choose another venue. For several requirements, contact the restaurant before paying a deposit.

Calculate the complete experience

Water, coffee, pairings and product supplements may sit outside the menu price. Ask about the number and size of drinks and any non-alcoholic alternative.

Include travel and read deposit and cancellation conditions. When giving a voucher, establish what it covers and when it can be used.

Check before confirming
  • Menu per person
  • Water and drinks
  • Extras
  • Deposit conditions
  • Voucher validity

Choose a compatible evening

A long sequence needs time without a rushed departure. Arrive punctually because service may be coordinated for the table. Tell staff about a train, show or childcare deadline and ask whether it is compatible.

No specialist knowledge is required. Ask questions when you want to while allowing the team to serve. The right pace leaves room to enjoy the food and follow the planned sequence.

Common questions

How long does a tasting menu take?

Ask the venue; length varies with the sequence and service. Allow a margin.

Must everyone choose it?

Often a venue coordinates the whole table, but confirm its own rule.

Is a non-alcoholic pairing always available?

No. Ask about its contents and price or the available individual drinks.
